As Britain basks in high temperatures this week, Waitrose is launching a chilled avocado soup to help customers cool down in the heat.

The limited edition Edamame & Avocado Vichyssoise soup, made by Yorkshire Provender, is the only avocado soup sold in a UK supermarket. It launches this week, following the news that sales of avocados are rocketing by 184 per cent according to Kantar Worldpanel. Shoppers can't get enough of these versatile fruits, with chefs and retailers constantly looking at new and innovative ways to serve them.

Inspired by South American recipes, Yorkshire Provender Founder, Belinda Williams, took the ingredients of a traditional guacamole and the idea of an cooling Spanish gazpacho to create the soup, which is carefully cooked in small batches to keep fresh flavours. The new recipe also uses a vichyssoise base instead of the traditional tomato. Edamame beans have been added to the summery soup too, then the dish is finished with fresh mint leaves picked from the heart of the Yorkshire countryside.
